Elaboration and FeaturesThis sparkling wine comes from a precise selection of Chardonnay (85%) and Pinot Nero (15%) from the selected vineyards of Franciacorta. The vinification involves a gentle and progressive extraction of the grapes, followed by alcoholic fermentation in small amounts of steel. Maturation takes place before the cuvée is produced in the spring following the sale, with the addition of the 20% reserve wines gently mixed between Chardonnay and Pinot Nero. Followed by a second fermentation in a bottle and a contact aging with the owners for around 24 months, followed by another two months after bottling.
