In 1989, the wine was renamed Cuvée Annamaria Clementi Riserva in honor of the founder and mother of the cellar owner, Maurizio Zanella . With the 2008 vintage, the name Annamaria Clementi became definitive and was transformed into a ""Dosage Zéro"" wine, which means that no additional sugar was added to highlight its purity and integrity .

The production vineyards of Cà del Bosco Annamaria Clementi Franciacorta DOCG Riserva Dosage Zero are 14 Chardonnay vineyards, with an average age of 38 years, located in the Municipalities of Erbusco, Adro, Corte Franca, Iseo and Passirano. 6 Pinot Noir vineyards, with an average age of 33, located in the Municipalities of Erbusco, Iseo and Passirano. 2 Pinot Bianco vineyards, with an average age of 27 years, located in the Municipality of Passirano.

Cà del Bosco Annamaria Clementi Franciacorta DOCG Riserva Dosage Zero is produced by 14 vineyards of Chardonnay, with an average age of 38 years, located in the municipalities of Erbusco, Adro, Corte Franca, Iseo and Passirano. In addition, 6 Pinot Noir vineyards, with an average age of 33 years, located in the municipalities of Erbusco, Iseo and Passirano, and 2 Pinot Blanc vineyards, with an average age of 27 years, located in the municipality di Passirano, are used to produce this Franciacorta Riserva Dosage Zero sparkling wine.

The Dosage Zéro makes this sparkling wine one of the most authentic on the market, capable of enhancing and to enhance the typical features of the grapes of the vines of origin. The winemaking process of Annamaria Clementi Franciacorta DOCG Riserva is aimed at the pursuit of excellence both in the vineyard and in the cellar. The grapes are harvested by hand and promptly codified and cooled, each bunch is selected by expert eyes and hands, to then benefit from a particular washing and whirlpool system for the bunches. The base wine is obtained exclusively from very first pressing musts. The alcoholic fermentation takes place in small oak barrels selected and aged for at least 3 years, and remains on its lees for another 6 months.

Only the wines from the best barrels are tapped to give rise to the Annamaria Clementi Franciacorta Riserva DOCG. The disgorgement takes place in the absence of oxygen, using a unique system in the world, designed and patented by Ca' del Bosco, which avoids oxidative shocks and further additions of sulphites. Finally, each packaged bottle is uniquely marked, to ensure traceability
