| Description | Augustale Castel del Monte Nero di Troia Riserva DOCG (Denomination of Controlled and Guaranteed Origin) is a red wine produced in the municipality of Ruvo di Puglia, in the province of Bari, in selected vineyards located on the limestone hills within the Alta Murgia National Park. Legend has it that around the year 1200 BC, Diomedes, returning home, after the end of the Trojan War, it stopped along the Apulian coast, in the territory of Ruvo. Here, he gave the farmers of the area a few vine shoots which, over time, gave away a delicious wine, true nectar of the Gods. Thus was born the Nero di Troia, which is today a symbol of the territory and one of the best wines in Italy. The Cantina di Ruvo di Puglia CRIFO (acronym of Cantina della Riforma Fondiaria), born as a cooperative association of a few winemakers, over the years it will become a true engine of development and enhancement of wines that express all the power and elegance of a unique terroir and wonderful. Augustale Nero di Troia Riserva is a splendid, aristocratic and precious wine: a sip of it is the nectar of the Gods, authentic joy, immense pleasure. < p>The 2020 vintage of the Augustale Nero di Troia begins with the harvest at the end of October. The freshly harvested grapes are taken to the cellar for vinification with the careful selection of the bunches and subsequent crushing and destemming. A preferential maceration is then carried out at 12 °C, then the must is left to ferment in steel for 10/15 days at 23 °C. Subsequently it is pressed in a soft way and the malolactic fermentation takes place again in steel. The wine is aged for 12 months in wood, partly in second passage barriques and partly in large 80hl barrels.
