On the nose, it offers an intense and complex bouquet, with notes of citrus, almond, briny and a straight line of mineral notes. On the palate, the wine is savory and complex, with an astonishing balance and a long and pleasant persistence. The alcohol content is of 11.5%, giving the wine a light but well-structured body.
The grapes are harvested manually in the first ten days of October. The vinification involves direct pressing of the whole grapes, followed by a static and natural decantation of the must for approximately 30 hours. The alcoholic fermentation, lasting 15-20 days, is spontaneous, favored by the addition of native yeasts (Pied de cuve). The refinement takes place in steel tanks for 6 months, with three rackings and clarification through natural decantation. Bottling takes place at the end of April-beginning of May of the year following the harvest.
