Aurora Etna Bianco DOC

The Aurora Etna Bianco DOC 2023 by I Vigneri is a white wine that celebrates the essence of the Etna volcano and the Sicilian wine tradition. The name "Aurora" recalls the dawn and also a small native butterfly of Etna, represented on the label and at risk of extinction. Produced with Carricante (90%) and Minnella Bianca (10%) grapes, this wine expresses the freshness and minerality of the typical of volcanic soils. The I Vigneri winery, led by Salvo Foti, adopts traditional and sustainable practices, producing authentic wines that respect the territory.

Wine Characteristics

Aurora Etna Bianco has a brilliant straw yellow color, with lively golden reflections. On the nose, it offers an intense and complex bouquet, with notes of citrus, almond, briny and a straight line of mineral notes. On the palate, the wine is savory and complex, with an astonishing balance and a long and pleasant persistence. The alcohol content is of 11.5%, giving the wine a light but well-structured body.

Production Process

The grapes are harvested manually in the first ten days of October. The vinification involves direct pressing of the whole grapes, followed by a static and natural decantation of the must for approximately 30 hours. The alcoholic fermentation, lasting 15-20 days, is spontaneous, favored by the addition of native yeasts (Pied de cuve). The refinement takes place in steel tanks for 6 months, with three rackings and clarification through natural decantation. Bottling takes place at the end of April-beginning of May of the year following the harvest.

Organoleptic Profile

The Aurora Etna Bianco DOC 2023 stands out for its complex and fresh aromatic profile. On the nose, notes of citrus, almond, salt and minerals emerge. On the palate, the wine is balanced, with good acidity which gives freshness and a pleasant flavour. The ending is long and persistent, with delicate mineral notes that recall the volcanic terroir of Etna.
