Description | Barolo DOCG Riserva 2016The Barolo DOCG Riserva 2016 is an exceptional wine, made with 100% Nebbiolo grapes, coming from the prestigious MGAs of Cannubi, Liste and Fossati in Barolo. The wine reflects the complexity and excellence of these areas, perfectly combining the various characteristics of each vineyard. Production detailsThe vineyards are exposed to the south/south-east and are located at an altitude between 290 and 370 meters above sea level. The soil is composed of clayey calcareous marls, which contribute to the distinctive character of this wine. The vine training system is modified Guyot (archetto), with a density of 4,000 vines per hectare. The harvest took place between October 12 and 19. Technical notes2016 was an exceptional harvest year, remembered for being one of the longest in recent years. After a mild and dry start to the year, the end of February and all of March saw a drop in temperatures and abundant rainfall, favoring a good water reserve in the soil and early budding. Despite a slowdown in the vegetative functions of the plant due to the "late" cold, the summer climate guaranteed complete ripening of the grapes, leading to wines characterized by excellent balance, important aromas and great structure. After the careful selection of the grapes in the vineyard, the winemaking process included a destemming, followed by spontaneous fermentation in large concrete tanks for about 15 days at temperatures between 22° and 28°. This was followed by a 40-day submerged cap maceration, during which malolactic fermentation also took place. In spring, as temperatures rose, the wine was transferred into large Slavonian oak barrels, where it matured for 5 years and 10 months. Subsequently, a passage in concrete followed by bottling took place. Organoleptic characteristicsThe Barolo Riserva 2016 has a ruby red color with garnet reflections. The nose reveals hints of red fruits, strawberries and blackberries, with a slight hint of spice. On the palate, the wine is full, enveloping, warm, accompanied by a pleasant acidity which gives it an important note of freshness. A soft tannin completes the picture, leading to a finish of great elegance. Food pairingsThis Barolo goes perfectly with important dishes, such as traditional Piedmontese meat main courses and aged cheeses. Spanning the world's traditions, the wine pairs well with various beef preparations such as Baltimore pit beef in the United States and picanha in Brazil. Interesting recipes include coffee or chocolate picanha. After a few years of aging in the bottle, this wine lends itself perfectly to "meditation" tasting, perhaps accompanied by a piece of good dark chocolate.
