Description | Bolgheri Sassicaia Doc 1995 is a wine that comes from stones, courageous, produced in the vineyards of Tenuta < strong>San Guido immersed in the Mediterranean scrub of Castagneto Carducci between ancient olive trees and oaks centuries-old, in sand tombolos created by the sea breeze and lerici and ash trees that shade the padule (swamp), up to the avenue of cypresses. An ancient land, a natural park located between the fortress of Castiglioncello and the coast with dunes and marshes that extends into the heart of the Maremma, furrowed by the long avenue of cypresses of Carducci's memory. An extraordinary and marvelous area where man with his art and traditions meets the great spectacle of nature in the name of a common well-being. An ecosystem based on a sustainable balance, on the traces of the past that looks to the future; a corridor between the sea and the hill; a feeling of peace and tranquility. Here, which Mario Incisa Marquis della Rocchetta first, and his son Nicolò after, grafted French vines Cabernet Sauvignon and Cabernet Frenc giving rise to a Bordeaux-style red wine that will become, over the years, one of the best red wines in the world. “Well dressed and brilliant, bouquet dense and dignified in itself, of uncommon surly elegance … consistent backbone in the well-structured fabric."(Luigi Veronelli, Panorama, 1974). The meeting with the young and brilliant Giacomo Tachis will mark the real turning point and the great success and worldwide fame of this red wine. Giacomo Tachis, world-renowned winemaker and profound wine connoisseur, is universally known for having created the three most famous Super Tuscan wines in the world: Sassicaia, Tignanello and Solaia. The vineyards are located at an altitude between 40 and 400 meters above sea level. The surrounding hills of Bibbona and Castagneto characterize the climate and the microclimate by protecting the grapes from the cold north-east winter winds and refreshing them in the hot summer months with the breeze that comes from the sea; while the surrounding woods, dense and uncontaminated, are an authentic natural lung. Tenuta San Guido is the only company to have vineyards capable of claiming the Bolgheri Sassicaia Doc, a typology born as a sub-area of the Bolgheri DOC as early as 1994 and converted to an autonomous DOC in December 2013. The 2015 vintage was awarded by the prestigious Wine Spectator magazine as the best red wine in the world. The Sassicaia Doc vintage began in mid-September with the harvest of the Cabernet Franc grapes and, subsequently, with those of Cabernet Sauvignon, completing at the end of September with the harvest of the grapes from the vineyards located on the hills. Excellent quality of the grapes that arrived in the cellar crunchy, well turned on color and very healthy. The vinification took place with the selection of the grapes using a sorting table. Very soft pressing and destemming of the grapes and subsequent fermentation in steel at a controlled temperature of around 30°; - 31°C (without the addition of external yeasts), with maceration of about 12-15 days for the Cabernet Francs and 10-13 days for the Cabernet Sauvignon. Frequent pumping over of the musts and délestages. Malolactic fermentation in steel completed in November. The refinement, at the end of the malolactic fermentation and after a rotation of decanting to ensure cleanliness, the wine begins the refinement period in French oak barriques for a period ranging from 20 to 25 months. The duration of the refinement is technically decided on the basis of the seasonal trend of the vintage.
