Description | Cannubi - Barolo DOCGThe Cannubi Barolo DOCG is made in Italy. a superior class wine produced exclusively with Nebbiolo grapes, coming from one of the most important; renowned and prestigious MGA (Additional Geographic Mentions) of Barolo, the Cannubi. Production detailsThe vineyards face south and are located at an altitude of 290-320 meters above sea level, covering an area of 1.30 hectares. The land is composed of clayey calcareous marls, slightly sandy, which contribute to the distinctive character of this wine. The vine training system is a unique one. Modified Guyot (arch), with a density of of 4,000 vines per hectare. Technical notesThe harvest takes place in the first ten days of October. Natural fermentation, without added yeasts, takes place in cement tanks for about 12 days, with temperatures ranging from 22 to 29 °C, followed by submerged cap maceration for about 40-50 days at 29 °C. After racking, malolactic fermentation begins for 15 days at a constant temperature of 22 °C. The wine then matures for 4 years in 4500 liter Slavonian oak and French oak barrels, and ages for a further 6 months in the bottle.
