This wine, designed to refine over time, represents the elegance and complexity of the Umbrian territory.Innovative Winemaking:Cervaro della Sala was one of the first Italian whites to carry out malolactic fermentation and aging in barrique, a practice started in 1985 by Renzo Cotarella, winemaker at Castello della Room. This process gives the wine a unique character, enhancing the qualities of the Chardonnay grapes, integrated with a small part of Grechetto.Tasting Notes:Cervaro della Sala 2022 stands out for its slightly straw yellow color with greenish reflections. On the nose it offers a complex and intriguing bouquet, with smoky sensations, notes of cedar and flint, as well as floral hints of broom and mimosa.
