This wine, designed to refine over time, represents the elegance and complexity of the Umbrian territory. Innovative Winemaking:Il Cervaro della Sala it was one of the first Italian whites to carry out malolactic fermentation and aging in barrique, a practice started in 1985 by Renzo Cotarella, winemaker at Castello della Sala. This process gives the wine a unique character, enhancing the qualities of the Chardonnay grapes, integrated with a small part of Grechetto. Tasting Notes:Cervaro della Sala 2023 stands out for its slightly straw yellow color with greenish reflections. On the nose it offers a complex and intriguing bouquet, with smoky sensations, notes of cedar and flint, as well as floral hints of broom and mimosa. On the palate, the wine is vibrant and fresh, with notes of vanilla, lemon butter and small pastry. A wine that promises a long evolution over time, despite already being accessible and pleasant to taste.
