Description | Attems is a wine estate in Capriva Del Friuli, a small town in the Collio in the province of Gorizia (Friuli-Venezia Giulia). Since ancient times, this area has been suited to viticulture, and the Attems family was one of the original creators. In fact, the first document attesting the possession of lands suited to viticulture in Collio by the Attems dynasty dates back to 1106 and the production of Ribolla Gialla and Refosco is recorded in the ledgers of 1764. Today, the < strong>Tenuta Attems extends over 44 hectares of land on the terraced slopes west of Gorizia, facing south, protected both from the cold north winds and from the Trieste bora. The Collio area is particularly suited to viticulture, and already at the end of the 19th century it allowed Friuli Venezia Giulia to be one of the first Italian wine regions. Some of the best white wines in Italy are produced here, including Ribolla Gialla, a native grape variety that Attems particularly values, along with other noble varieties such as Sauvignon Blanc, Pinot Grigio, Chardonnay and Merlot. Biodiversity is a key feature of the ecosystem in which the Attems vineyards grow. Thanks to the ideal environmental conditions, the vineyards bear fruit in a healthy and natural environment. Cicinis Collio Sauvignon Blanc DOC is the company's symbolic white wine, produced from a single Sauvignon Blanc vineyard located on the homonymous hill in the heart of the Collio. It is a complex wine, of great elegance and perfect balance, which fully represents the quality and excellence of Attems wines and of the entire region. The Cicinis Collio Sauvignon Blanc DOC Vintage 2021 is a white wine with an intense aroma, characterized by marked natural acidity. This vintage was influenced by winter temperatures, which remained steadily below 0°C for a few weeks in January and February. This delayed the vegetative awakening, causing a week delay in the germination of the Sauvignon on the terraces facing south compared to the historical average. The 2021 season of Cicinis Collio recorded a slowdown of vegetative growth due to the low temperatures of January and February, despite a mild March. The Sauvignon vines on the south-facing terraces were the first to germinate, but had slower growth in May due to the cold and rainy days. The sunny weather in June favored rapid growth and adequate leaf area. The Sauvignon blossomed in early June in dry, sunny weather. July and August saw temperature fluctuations, but sufficient rainfall maintained good growth across all varieties. The 2021 harvest began on 31 August, with the south-facing terraces harvested first, and concluded 15 days later. The vintage was characterized by high natural acidity and particularly intense aromas. The vinification of Cicinis Collio begins with the harvest, which is done by hand and in boxes to guarantee highest quality of grapes. The pressing operation is carried out delicately and the entire flower must is left to rest for 24 hours in a static settling. Alcoholic fermentation then takes place in egg-shaped concrete tanks, 50% reserved exclusively for this wine, 10% in new barriques and 40% in second and third passage barriques and tonneaux. These containers allow the Cicinis to refine and enrich itself thanks to the permanence on the total lees, up to the preparation for bottling. During the 9-month maturation at low temperatures, the wine does not undergo malolactic fermentation, thus maintaining its freshness and vitality. Cicinis Collio Sauvignon Blanc DOC is the perfect wine to enhance the flavors of rich and savory, characterized by a high fat content, such as pork, sausages and ribs. But not only! This wine is also ideal to accompany legume soups without tomatoes, cream of mushrooms and pan-cooked chicken with vegetables. Thanks to its freshness, Cicinis Collio manages to perfectly balance strong flavors of these dishes, creating a unique and unforgettable harmony.
