The dosage has been constantly reduced to enhance the characteristics of the grapes of origin. The vinification of Ca' del Bosco Cuvée Prestige Edition 45 is a unique and meticulous process. The Chardonnay, Pinot Bianco and Pinot Nero grapes are carefully selected and vinified in compliance with the Ca' Method. of the Wood. The hand-picking in small crates, classification and cooling are just some of the steps that precede the actual vinification. The grapes are then subjected to an exclusive washing and whirlpool system, called "terme degli acini", to guarantee the highest quality of the product. Fermentation takes place in the absence of oxygen and the base wines remain in steel tanks until the following March. A long period of refinement, of at least 2 years, is necessary to bring out the best character of the vineyards of origin. The dégorgement takes place in the absence of oxygen, using a unique system patented by Ca' del Bosco, which guarantees greater purity, pleasantness and longevity of the product.
