Vineyards and HarvestComing from 24 carefully selected vineyards in Erbusco, Adro, Cazzago San Martino, Corte Franca and Passirano, the 2019 harvest was characterized by particular climatic conditions which favored the formation of small but high quality bunches, with a average yield of 4,800 kg per hectare. Method and WinemakingThe Ca' Method del Bosco guarantees careful selection and treatment of the grapes, with an innovative washing and hydromassage system. Fermentation takes place in small oak barrels, emphasizing the aromatic complexity and finesse of the wine. The aging on the yeasts for 48 months gives this Dosage Zero a unique structure, without the addition of sugars at disgorgement.
