Description | Ersa Paestum PGI 2018: The Essence of Cilento in Francesca Fiasco's CellarsIn a land of sunny hills and ancient traditions, where autumn brings with it the smell of harvest, the Francesca Fiasco company was born. The vineyards extend for approximately 6 hectares in the heart of the Cilento, Vallo di Diano and Alburni National Park, between the municipalities of Castel San Lorenzo, Felitto and Roccadaspide, at an altitude between 250 and 450 meters above sea level. It is in this unique setting that Ersa Paestum PGI 2018 comes to life, a red wine that tells the story and passion of an extraordinary territory. Vine varieties and winemakingErsa Paestum PGI 2018 is the result of a skilful blend of Aglianico, Cabernet Sauvignon, Barbera and other red grape varieties typical of the area. The carefully selected grapes are vinified in 50 hl French oak vats, a process that allows the organoleptic characteristics to be kept intact and a unique aromatic complexity to be developed. The refinement takes place 30% in first passage tonneaux and 70% in second and third passage tonneaux for a period of 18 months. Subsequently, the wine rests for a further 12 months in glass, perfecting itself and acquiring elegance and depth. Organoleptic CharacteristicsAt sight, Ersa Paestum PGI 2018 has an intense ruby red color, which heralds a wine of great structure and personality. On the nose, it releases a complex and fascinating bouquet: the fruity notes of cherry and plum intertwine with hints of undergrowth, red flowers and spices. The tertiary essences of dark chocolate, licorice, tobacco, balsam, menthol, cinchona and graphite further enrich the aromatic profile, giving depth and sophistication. On the palate, the sip is tight and refined, full-bodied and austere, centered and tempered, imposing and fascinating. The tannic structure is well integrated, offering a sensation of fullness and a long and persistent finish. Gastronomic PairingsErsa Paestum PGI 2018 is an ideal wine to accompany rich and tasty dishes. It pairs perfectly with red meats, roasts and game, as well as aged cheeses and quality cured meats. Its aromatic complexity and robust structure also make it an excellent companion for mushroom and truffle-based dishes, enhancing its intense and enveloping flavours. Thanks to its versatility, it can also be appreciated on its own, as a meditation wine, for a complete and satisfying wine experience. Technical InformationThe Paestum PGI Rosso Ersa 2018 by Francesca Fiasco is produced in the Campania region, in Italy. The alcohol content is 13.5%, and is bottled in 75 cl format.
