Description | Franciacorta is a wine area located in Lombardy, in Northern Italy, famous for the production of sparkling wines made with the traditional method, similar to the one used in Champagne. The main grape variety used in Franciacorta wines is Chardonnay, together with Pinot Noir. The wines are usually dry and have high acidity and finesse in the aromas and flavors. Franciacorta DOCG (Denomination of Controlled and Guaranteed Origin) guarantees that the wine meets the strict quality and production criteria established by local authorities. Franciacorta Brut DOCG is characterized by a fine and persistent bubble, with a fruity aroma and a dry and fresh taste. It's an excellent accompaniment to appetizers, fish, shellfish and fresh cheeses. Franciacorta Brut DOCG from the farm Ferghettina involves the use of whole bunch grapes which are delicately pressed with a pneumatic press to separate the musts into two fractions: the flower must, which has the best qualitative characteristics and which is for the production of Franciacorta and the second pressing must that is not destined for bottling. The alcoholic fermentation takes place in steel tanks at a controlled temperature between 16 and 18 °C. the base wine rests in the tank until the spring following the harvest. Then the wine is then transferred to bottles together with the yeasts and residual sugar for secondary fermentation in the bottle. During this period, the wine undergoes a process of remuage (pumping over) and degorgement (racking off) to remove yeast deposits. After this process, the wine is sealed with a cork stopper and a metal cap. Franciacorta Brut DOCG must rest in the bottle for at least 18 months before being marketed.
