Description | Franciacorta is a wine-growing area located in Lombardy, in Northern Italy, famous for the production of sparkling wines made with the traditional method, similar to the one used in Champagne. The main grape variety used in Franciacorta wines is Chardonnay, together with Pinot Noir. The wines are usually dry and have high acidity and fine aromas and flavors.Franciacorta DOCG strong> (Controlled and Guaranteed Designation of Origin) guarantees that the wine meets the rigorous quality and production criteria established by the local authorities. Franciacorta Brut DOCG is characterized by a fine and persistent bubble, with a fruity aroma and a dry, fresh taste. It's an excellent accompaniment for appetizers, fish, shellfish and fresh cheeses. Franciacorta Brut DOCGof the Ferghettina farm involves the use of whole bunch grapes which are delicately pressed with a press pneumatic system to separate the musts into two fractions: the free-run must, which has the best qualitative characteristics and which is used for the production of Franciacorta and the second pressing must which is not intended for bottling . Alcoholic fermentation takes place in steel tanks at a controlled temperature between 16 and 18 °C. the base wine rests in the tank until the spring following the harvest. Subsequently the wine is transferred into bottles together with the yeasts and residual sugar for secondary fermentation in the bottle. During this period, the wine is subjected to a process of remuage (pumping over) and degorgement (drawing off) to remove yeast deposits. After this process, the wine is sealed with a cork and a metal cap. Franciacorta Brut DOCG must rest in the bottle for at least 18 months before being marketed. Ferghettina is a wine company founded in 1971 and stands out for its attention to quality and environmental sustainability.
