Originally from the municipality of Gavi, in the heart of Piedmont, it stands out for its elegance and refinement. Production detailsThe location of the vineyards is between 200 and 300 meters above sea level, with a southeast and southwest exposure. The soil is sandy, rich in arenaceous marl, and the training system is Guyot, with a density of 4,000-5,000 vines per hectare. The harvest usually takes place in mid-September, the wine has an alcohol content of 12.5% vol. Technical notesThe vinification begins with a soft pressing of the grapes, immediately separating the must from the skins. Fermentation takes place at low temperature (18-20° C) in stainless steel tanks. After fermentation, the wine is aged in steel for about 2-3 months on the fine lees of the yeasts.
