Recipe for Neapolitan pizza dough

Ingredients:

• 500 g of flour
• 10 g of salt
• 30 g of extra virgin olive oil
• 15 g of brewer's yeast
• 320 ml of water

Procedure:

1. In a large bowl, combine the flour and salt and mix well.
2. Add the brewer's yeast dissolved in warm water and stir until fully incorporated.
3. Add the extra virgin olive oil and mix with a wooden spoon.
4. Transfer the dough to a floured work surface and knead by hand for at least 10 minutes until it becomes soft and elastic.
5. Put the dough in an oiled bowl, cover it with a damp cloth and let it rise for at least 2 hours or until it doubles in volume.
6. After the first leavening, divide your dough into loaves, and place them for another 2 hours in a previously floured dough holder box.
