This Riserva white wine was born in a vineyard located in Montefusco, at an altitude of 700 meters, where the cool environment and North-East exposure help to preserve freshness and acidity in the 100% Greco di Tufo grapes. The clayey-sandy soil, rich in limestone, is the foundation of a wine with a solid structure and the capacity for gradual and refined aging. Winemaking Process and Aromatic ProfileThe harvest takes place in the third decade of October, when the bunches are picked by hand in the early hours of the day to preserve their integrity. The soft pressing and fermentation in French oak barriques, half new and half first passage, are combined with an 8-month maturation sur lies with batonnage. This process gives the wine exceptional complexity and minerality, as well as an aromatic bouquet that combines elegant citrus and floral notes with nuances of chamomile and bread crust.
