Description | The Le Difese Toscana IGT 2021 Tenuta San Guido wine is a real explosion of flavours, a perfect fusion between the power of Cabernet and the sincerity of Sangiovese. The result is an extraordinarily pleasant, smooth and versatile wine that goes beautifully with a wide range of dishes. The presence of Sangiovese is what gives it its distinctive personality, maintaining a strong link with the Tuscan territory and guaranteeing a wine with a clear identity. Yet, despite this specificity, Le Difese is a wine that easily adapts to different occasions and situations, inviting conviviality and friendship. But it is not only the wine that is extraordinary: the #39;entire Tenuta San Guido, located in the heart of Maremma, in the province of Livorno, in the Tuscany region , is a true wonder of nature. The hills, the sea, the woods and the cypresses create a unique and suggestive landscape, a sensory experience that expands well beyond the palate. The soils on which the Cabernet Sauvignon vines grow are particularly interesting, with a strong presence of calcareous areas rich in galestro and stones and partially clayey. The altitude between 100 and 300 meters above sea level, with south/south-west exposure, contributes to the creation of a perfect microclimate for the cultivation of vineyards. The 2021 vintage was respectable, with a favorable climate that allowed the vines to flower and create very high quality grapes. The constant and meticulous work of the producers has resulted in an extraordinary wine, capable of embodying all the beauty of Tuscany and of the art of winemaking. The 2021 vintage< /strong> it was a decidedly positive year for the production of Le Difese Toscana IGT, if compared with the previous year. Despite a rainy autumn and mild temperatures, the arrival of the polar perturbation ""Burian"" brought about a very harsh winter which favored the vegetative rest of the vines and the natural elimination of harmful insects. However, spring saw the return of a cold perturbation of Atlantic origin, which compromised some primary buds of the early vines and caused a loss of production. After a somewhat rainy May, the dry heat characterized the first half of August, until the arrival of a Balkan perturbation on August 16th, which brought rain and allowed the vines to recover, favoring the phenolic ripening of the grapes. The harvest, carried out by hand with careful selection of the bunches, took place calmly and calmly, in the coolest hours. The grapes have reached perfect ripeness, without excess sugar and with a nice pulp and well lignified pips. After harvesting by hand, the grapes arrived in the cellar with a quality level well above all expectations. The vinification phase was equally scrupulous and attentive, with a careful selection hand of the bunches on the sorting table and a soft crushing-destemming of the grapes to avoid breaking the berries. The primary fermentation was carried out in stainless steel vats at a controlled temperature, with maceration on the skins to encourage aromatic extraction and refine the tannins. The malolactic fermentation was carried out in steel and concluded towards the end of November. The aging was equally meticulous and accurate, with a period of rest in steel for about 3-4 months, followed by an aging in French oak barriques previously used for Sassicaia and Guidalberto, lasting 6 -8 months. At the end of the aging period in wood, the wine returned to the steel tanks for the necessary tartaric stabilization, before bottling. The end result was a very high quality wine, with a perfect balance between acidity, density and soft and well integrated tannins. The fruity and spicy bouquet is enveloping and the structure unobtrusive, making the Le Difese Toscana IGT 2021 wine a unique and unforgettable sensory experience. |
