The "Mai Sentito" Frizzante On Millesimato Yeasts from the La Staffa winery is a sparkling white wine that embodies the freshness and liveliness of of the Marche region. Produced in Staffolo, in the province of Ancona, this wine is born from the meeting between tradition and innovation, thanks to the commitment and passion of the young winemaker Riccardo Baldi. With his artisanal approach and careful selection of grapes, Baldi has created a wine that surprises and delights with its authenticity. and originality.

Wine Characteristics

The "Never Heard" is obtained from a blend of 80% Verdicchio and 20% Trebbiano, coming from espalier-trained vineyards with Guyot pruning, located on hills at approximately 440 meters above sea level. These lands, once occupied by brackish springs, are now characterized by clayey-limestone soils which give the wine a particular minerality. At sight, the wine has a slightly hazy straw yellow color, indicative of its refermentation in the bottle.

Production Process

The grapes, carefully selected and harvested by hand in the first ten days of September, are delicately pressed and then fermented in stainless steel containers at a controlled temperature for approximately 20 days, using indigenous yeasts. After racking, the wine is bottled and left to referment naturally on the fine lees for approximately 4 months. Subsequently, the wine further ages in the bottle for 6 months before being marketed. This artisanal process gives the "Mai Sentito" a unique complexity. and a liveliness unique.

Organoleptic Profile

On the nose, the "Mai Sentito" releases intense aromas of yellow fruit such as peach and plum, citrus fruits such as cedar, and delicate floral notes of wild herbs and wild fennel. Light hints of yeasts and bread making complete the aromatic bouquet. On the palate, the wine is dry, fresh and lively, with a pleasant flavor which makes it smooth and thirst-quenching. Its good freshness and fruity taste make it perfect for daily consumption.
