Description | Moramora - An Authentic Malvasia Nera Salento PGIProfile of the WineConsidered one of the great native Salento vines, Malvasia Nera has always shared the vineyard with Negroamaro, helping to create blends of particular value. Moramora is an excellent example of Salento PGI produced with Malvasia Nera grapes. The grapes for this wine come from the rural area of San Donaci, in the province of Brindisi, where they grow in medium-textured soils. The vines, trained according to the spurred cordon system, are planted at a density of 4500 plants per hectare and produce 2 kg of grapes per plant. The harvest is carried out in the early hours of the morning, to preserve the freshness of the grapes. Vinification takes place in stainless steel at a controlled temperature of 22-24°C for 8-10 days, with various pumping over and delestage for a technological extraction of color and tannins. After the soft pressing and the first racking, the wine undergoes malolactic fermentation. Maturation takes place in second and third passage French oak barriques for 3 months. Tasting NotesMalvasia Nera Salento PGI Moramora has an intense ruby red colour. On the nose, it offers memories of small red fruits such as blackberries and mulberries, enriched by notes of dried plums and sweet spices that give it a deep complexity. In the mouth it is long, soft and characterized by silky tannins. Pairings and ServiceThe aroma of Malvasia Nera di Moramora goes perfectly with slow-cooked ragù, enhancing the structure of the wine. The best embers of meat and an assortment of cured meats and cheeses make this wine an ideal companion for the table. It is recommended to serve it at a temperature of 18°C, preferably in large goblets which favor its maximum olfactory expression. |
