Description | No Name: The unnamed Nebbiolo from Cantina BorgognoNO NAME is a 100% Nebbiolo wine from the Barolo area. Its unconventional name reflects the unique approach to the production of this excellent wine. Production detailsThe vineyards, located to the south/south-east/south-west and at an altitude of 370 meters above sea level, are cultivated according to the Guyot method, with a density of 4,000 vines per hectare. The soil is clayey-limestone, ideal for growing Nebbiolo grapes. Technical notesThe manual harvest of the Nebbiolo grapes is followed by a spontaneous fermentation in cement tanks for about 15 days at a temperature between 22 and 28 °C. After a light pressing, the wine is aged for just over two years in large Slavonian oak barrels. Organoleptic notesNO NAME has a ruby red color with violet reflections. On the nose, it offers a persistent and ethereal bouquet, with hints of flowers such as rose and violet, fresh fruit and spices. On the palate, it is dry, harmonious, velvety, full-bodied, austere and generous. Food pairingsThis Nebbiolo with its great structure goes perfectly with the great classics of Piedmontese cuisine, such as game and braised meat.
