Description | Pino Di Stio - 2020 - Cantina San Salvatore 1988Features:Pino di Stio is a IGP Paestum red wine obtained 100% from Pinot Noir grapes grown in an altitude of 650 meters in the Stio vineyard, in an area where the characteristic red pines grow. The soil is clayey-limestone and the training system is espalier with Guyot pruning and tying with willows. The vinification is classic in red with repeated pumping over and punching down at a controlled temperature with indigenous yeasts, followed by a aging in used 2°-3° barriques passage for 12 months and subsequent 14 months in the bottle. The annual production is 6,000 bottles of 750 ml and 250 of 1.5 litres, with an alcohol content of 14% vol. Pino di Stio is described as an elegant, highly fragrant and silky wine , with an average age of the plants of 15 years and a yield of 70 hl/ha. The recommended consumption period is between 2022 and 2025, with a serving temperature of 14/16 °C. This red wine is perfect with fish-based second courses such as tuna, octopus, salmon and with mushroom-based dishes and creamy soups with sweet flavours. The Cellar San Salvatore 1988is a winery located in the heart of Cilento, in an area protected by the Cilento and Vallo di Diano National Park, and produces wines of high quality using typical vines of the area, including Aglianico, Fiano and Greco.
