Description | Ribolla Gialla Venezia Giulia IGT 2020 Podversic DamijanThe Ribolla Gialla Venezia Giulia IGT 2020 by Podversic Damijan is an extraordinary white wine that embodies the essence of Collio, a territory renowned for its winemaking excellence. Produced with 100% Ribolla Gialla grapes, this wine is the result of a meticulous winemaking process which includes a long maceration on the skins and prolonged barrel aging, revealing a complex aromatic profile and a deep and decisive flavour. Grape variety and vineyardThis wine is obtained exclusively from Ribolla Gialla grapes grown on the slopes of Mount Calvario, at an altitude of 140-180 metres, on Ponka (Opoka Marl/Sandstone) soil with exposure to south. Viticulture follows natural methods, without the use of chemicals, using only copper and sulfur when necessary. Damijan Podversic's production philosophy is based on biodynamic principles, which guarantee maximum respect for the environment and for the intrinsic characteristics of the vine. Vinification and AgingRibolla Gialla is vinified through spontaneous fermentation in conical oak vats, with maceration on the skins lasting from 60 to 90 days. This long contact with the skins gives the wine its distinctive structure and aromatic complexity. Subsequently, the wine matures for 36 months in large 20 and 30 hectoliter barrels, and then further refines for 12 months in the bottle. This long and patient process allows the development of a rich and layered aromatic profile. Organoleptic CharacteristicsIn the glass, the Ribolla Gialla di Podversic presents itself with a bewitching bright amber yellow colour. On the nose, the bouquet is intense and complex, with notes of ripe peach, hazelnut, aromatic herbs and citrus peel. The presence of light hints of propolis honey and iodized memories adds further depth. On the palate, the wine is elegant and substantial, with a freshness and flavor that perfectly balance its powerful structure. The persistence is notable, leaving a lasting and pleasant impression. Gastronomic PairingsThis wine is ideal for accompanying rich and structured dishes, such as white meats, mature cheeses and based dishes of smoked fish. Thanks to its complexity and intensity, it can also be appreciated on its own, as a meditation wine, to fully enjoy its wide aromatic range. Service and Storage MethodsTo enhance the the characteristics of this wine are better, we recommend serving it at a temperature of 14-16°C in a large glass, ideal for intense and structured orange wines. Before tasting it, it is advisable to let it breathe for at least 15-30 minutes, allowing the wine to open completely and develop all its complex aromas. This wine is perfect to drink immediately, but can also evolve positively if kept in the cellar for a few years.
