Made in the best vintages, it comes from grapes selected from the company's oldest and best exposed vineyards. It is mainly composed of Chardonnay (95%) and a small part of reserve wines (5%), which come together to create a Franciacorta with a strong and "wild" character, as suggested by the name "Salvàdek", a Brescian dialect term.< /P> A Refined Production MethodThe fermentation takes place both in steel tanks and in oak barrels, with a soft pressing of the grapes and a selection of the best part for no more than 58 % of yield. Each cru is vinified in purity, giving the wine a unique and distinctive profile. The refinement of over 40 months in the bottle enhances its organoleptic characteristics, resulting in a Franciacorta with an intense golden yellow color and fine and persistent bubbles. Organoleptic Characteristics and PairingsAl nose, the Salvàdek Extra Brut reveals notes of white peach and lily of the valley, followed by nuances of hawthorn.
