This wine is characterized by its freshness and the aromas of red fruits, such as currants and raspberries, which make it a classic example of this controlled designation of origin. Winemaking ProcessThe vinification of Valpolicella begins with gentle pressing of the grapes and maceration for 8-10 hours at 10°C. Fermentation follows at a controlled temperature for 10-12 days with continuous pumping over to extract colors and flavors. The wine, after malolactic fermentation, matures in barrique for a few months before bottling. Sensory Characteristics and Gastronomic PairingsThe Valpolicella DOC offers the palate a well-balanced, round structure, enriched by notes of red fruit.
