| Description | Valpolicella Ripasso DOC Superiore - A Wine of Character and TraditionThe Valpolicella Ripasso DOC Superiore is an authentic expression of the Veronese territory, produced with passion by the Pasqua family. With an alcohol content of 13.5%, this wine embodies the essence of Valpolicella, a region renowned for its winemaking excellence. Distinctive Winemaking ProcessThe winemaking process begins with maceration on the skins for 15 days, followed by refermentation on the spent Amarone pomace. This "review" gives the wine greater structure and aromatic intensity. After racking, the wine ages in barrique for a few months, followed by a further refinement in the bottle for 2-3 months. Tasting Notes and PairingsThis Ripasso stands out for its intense red color and a bouquet rich in morello cherry, blueberry, currant, liquorice and toasted hints. On the palate, it is rich, warm and soft, with soft tannins, well balanced and persistent. Perfect with rich first courses such as hare pappardelle, or meat second courses such as braised beef, grilled meats and polenta with sausage. It is recommended to serve it at 18 °C. Grapes and OriginThe blend of grapes used for this Ripasso includes Corvina (60%), Rondinella (20%), Corvinone (10%) and Negrara (10%), coming from the Pasquan area of Valpolicella.
