Vetere Rosato Paestum PGI 2023 Magnum - A Classy Rosé

The Vetere Rosato Paestum PGI 2023 Magnum is a refined expression of the San Salvatore 1988 agricultural company, founded in 2004 in a land rich in history and tradition. Produced exclusively from 100% Aglianico grapes, this rosé stands out for its elegance and freshness, with an aromatic profile that recalls the scents of the Mediterranean scrub and delicate floral scents.

Tasting Notes

At the sight, the Vetere Rosato presents itself with a fascinating coral pink color, which immediately catches the attention. On the nose it releases an intense and complex bouquet, dominated by hints of berries, such as strawberries and raspberries, accompanied by floral notes of dog rose and violet. The aromatic balance is enriched by subtle hints of aromatic herbs and sea breeze, which add a touch of freshness. On the palate, the wine is enveloping, with a pleasant intensity and a soft structure that makes it particularly persuasive. Its freshness is balanced by a persistent minerality, which gives a long and satisfying finish.

Vinification and Aging

This rosé is produced from organically grown vineyards in the lands of Capaccio-Paestum, at an altitude between 150 and 210 metres. The Aglianico grapes are subjected to soft pressing to preserve their delicacy, followed by low-temperature maceration. The refinement takes place in steel tanks for a period of 6 months, to guarantee the wine the right freshness and aromatic complexity. The result is a balanced and vibrant wine, ideal for consumption by 2025.

Gastronomic Pairings

The Vetere Rosato Paestum PGI is an ideal companion for simple and genuine dishes, which they enhance freshness and versatility. It pairs perfectly with pizzas, focaccias and cold cuts, but also with traditional dishes such as pasta and potatoes with provola and fresh cheeses. It is also excellent to accompany an aperitif, where its liveliness and lightness will conquer the most demanding palates.

Consumption Occasions

Perfect to be enjoyed in moments of informal conviviality, Vetere Rosato lends itself to being the protagonist of a light lunch or a relaxing evening with friends. Served at the ideal temperature of 10-12 °C, it best expresses its freshness and harmony, making every sip a real pleasure. With a rating of 87 points from Tannico, this rosé confirms itself as a choice of quality and character, suitable for those looking for a refined but accessible wine.
