This wine stands out for its structure and refinement, thanks to the attention paid to the cultivation of the vines and the winemaking.</p><h3>Features of the vineyard and winemaking:</h3><p>The vines, between <strong>30 and 60 years old</strong>, they are cultivated at an altitude of 400-450 meters above sea level, with an east/west exposure and espalier-goyot training . The soil is mixed clayey-limestone sand, with underlying sulphurous veins which give the wine a deep minerality. The harvest takes place in mid-October, with manual collection in small 14 kg boxes. The vinification involves a soft pressing, followed by a natural sedimentation of the must, rigorously protected from oxygen.
